Please tell us about your background and experience in culinary arts.
I acquired a strong background in my native Italian and International cuisine after graduating in 1994 from hotel and catering school at ‘Universita’ dei sapori’ of Perugia, my home town.

I was employed in some of Perugia’s best hotels and catering companies as Commis Chef, such as “Hotel il Perugino” and “Gastronomia umbra”, then in 2000 I left Italy to improve my culinary skill in London at “L’incontro Restaurant” for two years.

I then returned to Italy to challenge myself in a Michelin Star restaurant in Bologna “La pernice e la gallina” under Marco Fadiga, chef and owner.

In 2003 I had the chance to be Executive Sous Chef at “Brufani Palace” a five star hotel in the Leading Small Hotels of the world Group in Perugia, then I left to be the opening chef of the “Stella Restaurant” at Kempinsky Hotel in Mumbai.

I then moved to Koh Samui in Thailand as Executive Chef at Rice Mediterranean Restaurant for two years, then came to Phuket in 2007 as Chef de Cuisine at JW Marriott in Mai Khao Beach for three more years.

I then joined Amanpuri Hotel Phuket, one of the most luxurious hotels in Thailand as Executive Sous Chef for two years, then took the Executive Chef position at Paresa Hotel & Resort Phuket, then Anantara Layan Phuket. I also opened my own Executive Chef consultancy and worked for a couple of 5 star start-ups in Phuket during 2016.

I am now delighted to join Pullman Phuket Panwa Beach Resort as Executive Chef.

What is your vision for the growth and development of Pullman Panwa’s culinary offerings?
My vision for Pullman Panwa’s culinary future is very dynamic and far-reaching. We will create a series of food and beverage activities which directly involves and responds to the desires of all our guests. In addition, we want to double our banquet and meeting operations and change many key concepts which drive our culinary creativity.

How will you differentiate Pullman’s cuisine and restaurants in future?
In fact the changes have already started. We are focusing on products and raw materials, and using our own vegetables coming from our organic garden, and improving supplier selection, so that we have a proper vision of the products history and production methodology throughout.
We want to give our guests a full gastronomic experience based on authentic and genuine food and recipes, delivering an original presentation and combination of flavors.

What culinary events and promotions can we look forward to from the Pullman Panwa in future?
At the F&B office we are planning a lot of activity as previous mentioned. On the immediate horizon we will have a series of great food theme nights, food festivals and a superb monthly Sunday brunch buffet.
