Introducing Chef Rahul Negi – A Master of Indian Culinary Arts at Sofitel Krabi Phokeethra Golf & Spa Resort

A highlight for diners at the luxury resort is the authentic cuisine of Chef Rahul Negi. A master of India’s culinary arts, Chef Rahul has an impressive culinary pedigree and in-depth knowledge of regional dishes. Prior to joining Sofitel Krabi, he worked at Hyatt Regency, New Delhi where he won the “Best Employee Award”. The Indian Tourism Minister Ms. Ambica Soni also presented Chef Rahul with a prestigious award recognising him as one of the “Best 35 chefs in India”. On many occasions, he has personally cooked for the former P.M of India, Mr. Atal Bihari Vajpayee.

Chef Rahul discovered his passion for cooking as a teenager and embarked on a three-year culinary apprenticeship in New Delhi. Over the years, he has mastered authentic regional Indian dishes and has also become interested in contemporary interpretations of traditional dishes. “At Sofitel Krabi, I ensure that our Indian food is made with passion and that it stays authentic to its origins. However, I do enjoy introducing modern techniques into the preparation and presentation of recipes,” he says. “I love to surprise and impress people and like nothing more than seeing our guests being very appreciative of their food and leaving with a smile on their face.”

Chef Rahul has an outstanding repertoire of dishes but says the one closest to his heart, and one always on the menu at White Lotus, is chicken tikka masala. “Although this dish originates from the northern plains of India, it is now famous around the world. In 2001, it was declared the national dish of the U.K. This delicious dish is a thick gravy of onion, tomato, and aromatic Indian spices combined with cream and marinated chicken,” says Chef Rahul. He recommends eating the aromatic curry with an Indian naan bread or steamed aromatic rice topped with coriander leaves.

Chef Rahul’s delicious Indian cuisine is served at White Lotus, one of Krabi’s most popular restaurants. Each dish on his menu of irresistible northern favourites is a fragrant blend of spices and premium ingredients, freshly made and cooked to perfection.
